    Cooking in America visits Paper Dosa, combining flavors of South India, and the American Southwest Smack dab in the middle of Santa Fe is Paper Dosa - a South Indian restaurant serving a multitude of dosas, a type of pancake made from a fermented batter. The kitchen is lead by chef Paulraj Karuppasamy, who had to travel all the way to San Francisco to reconnect with his Indian roots - by way of the Maldives, Miami, and the Bahamas.
