This one, from the new Bestia cookbook brings a big glug of port to the equation for a rich sweetness that stands up to the piquant liver flavor. These measurements make enough for four.
    1½ cups port
    ½ shallot, chopped 1 sprig rosemary 1 sprig sage 1 sprig marjoram 5 black peppercorns 5 juniper berries, smashed
